INGREDIENTS

- 12 main shrimps
- 7 oz of atlantic fluke
- 7 oz of calamari
- 1 blood orange
- 1 Navel orange
- 1 Cara Cara orange
- 1 avocado
- 1 lime
- 1 lemon
- 4 kumquats
- 1/2 green chili
- 1 red onion
- 1 fennel
- 1 cucumber
- Cilantro
- Olive oil
- Orange oil
- Lemon oil
- Salt, pepper
- Fleur de sel
- Piment d'Espelette
LA RECETTE DU CHEF

Make the kumquats boil in orange juice one time and let them fit.

Slice and season the shrimps. Lightly cook them with the calamari seasoned in a pan with a little bit of olive oil. Add some pimento d'Espelette. Cool down in the refrigerator.

Slice the fluke . Segment the oranges. Cut the fennel, the cucumber, the red onion, the green chili, a few cilantro. Mix everything with the calamari and the shrimps. Put the juice of the lemon and the lime. Season with the two citrus oils, salt and pepper. Slice and take off the seeds of the kumquats. Add them to the mix.

Put into a plate and add the citrus and the sliced avocado. For decoration put a few fennel branch. Put a few fleur de sel and some piment d'Espelette.
