Gratin of red berries Laetita

INGREDIENTS

- 2 ounce sugar
- 3 eggs
- 1 cake
- Raspberry alcohol
- Red berries
- Whipped cream
- Vanilla ice-cream
- Raspberry coulis
LA RECETTE DU CHEF

- Put the sugar in a pot.
- Add 3 yolks.
- Cook slowly, and make a sabayon.
- Cold it on ice, and keep it in the fridge.
- Cut the cake in cubes, and perfume it with raspberry alcohol
- Add some raspberry alcohol in the cold sabayon and mix.
- Add 4 tablespoons of whipped cream and mix.
- Put a flattened ball of ice-cream in a plate.
- Add some red berries over.
- Add some raspberry coulis.
- Add the sabayon.
- Make a gratin with it under the grill.
- And add some sugar glazed over.
