John Dory with winter citrus

INGREDIENTS

- 4 filets of John Dory
- 1 grapefruit
- 1 blood orange
- 1 navel orange
- 1 daikon radish
- 2 tbs of fresh soy beans
- 1 cup of tarragon
- 1 oz of spring onions
- 1 tbs of powder sugar
- 1 lbs of chicken stock
- 2 tbs of corn starch
- 1 garlic clove
- 2 branches of thyme
- Salt
Pickle :
- 1/2 cup of water
- 1 cup of white balsamic
- 2 tbs of sugar
- 1 tsp of salt
Sauce :
- 1/2 cup of olive oil
- 1/2 cup of pickle liquid
- 1 cup of chicken stock
- 1 oz of honey
- 0.2 cup of avocado oil
LA RECETTE DU CHEF

Peal and slice the radish. Then let it in the pickle for 1 hour.

Segment the citrus and put them on an oven plate. Sprinkle some sugar on it. Let them dry overnight in the oven that you just turned off. Cut them in 3 parts.

Bring the chicken stock with the corn stach, the garlic and the thyme to a boil. Cut the fire and put the fish 12 min in it.

Emulsify the sauce.

For the dressing of the plate, put the fish with over, the beans, the radish, the citrus , the spring onions, the tarragon. Put a line of sauce and of avocado oil around.
