INGREDIENTS

- 1 filet of sea bass
- 1/2 spaghetti squash
- 1 tbs of toasted walnuts
- 2 tsp of pumpkin seeds
- 1 tbs of diced apple
- Vegetable stock
- 1 tsp of honey
- Olive oil
- Salt, pepper
- 1 tsp of chopped herbs
Sherry sauce :
- 2 cups of sherry
- 2 tbs of minced shallots
- 1 garlic clove
- 1 tbs of butter
- 1 tsp of curry
LA RECETTE DU CHEF

Remove the skin and marinate the sea bass in olive oil. Season and grill it skin side first.

Empty the center of the squash, season and put a little olive oil. Let it dry in a oven. Grate it with a fork to get kind of a spaghetti.

For the sauce, cook the sherry with the shallots and garlic. Season with the curry and terminate with butter. Pass trough a tamis.

Caramelize the honey directly in a pan. Add the walnuts and season. Add two tbs of spaghetti. Add 1 tbs of sauce, 1 tbs of vegetable stock, the diced apple and the seeds. Finish with the herbs and a line of olive oil.

Dress the spaghetti and over the fish skin side up. Sauce over.
