INGREDIENTS

- 7 oz of tuna
- 2 tbs of sweet miso
- 1/2 cup of soya sauce
- 1/2 cup of mirin
- 1/2 cup of sake
- 1/2 cup of tomato water
- Salt, pepper
- 1 tbs of creme fraiche
- Olive oil
- Pickled cucumber
- Pickled radishes
- Pickled turnip
- Red cress
- 4 tsp of caviar
- 1 tsp of sesame paste
- 1 tsp of wasabi
LA RECETTE DU CHEF

Put the miso , the tomato water, a tsp of sake and mirin, the creme fraiche in a blender and emulsify with a line of olive oil. Mix a part with the sesame paste and another with the wasabi.

Mix the soya sauce, the mirin and the sake. Slice the tuna and put it in the nage during a few minutes.

Drop a line of sauce in the plate. Display the pickled vegetables. Add somme red cress. Put the fish and a little bit of caviar on it. Finish with points of sauce of both.
